It sheets the dough in exactly the same way at all times, always with the same rolling steps, always to the same final thickness and always with the same amount of dusted flour. In doing so, it becomes the basis for the consistent pastries that your customers want.


Simple operation
The colour screen with easily comprehensible pictures and symbols makes programming and operation child’s play. You can create up to 50 individual programs and assign them names. The programs can then be simply called up and started. From that point on, the machine does the work itself and continuously displays the most important data graphically, i.e. without the need for language, in the colour display. This means it is easy even for temporary personnel to operate the Compas and you can deploy your specialist personnel for more sophisticated tasks. If the room or dough temperature have changed, you can quickly and easily make corrections for that particular day.


High-performance and fast
The Compas is a high-performance dough sheeter that sheets dough at high speed. You can process blocks of dough of up to 20 kg. The sturdy Compas is made of stainless steel and has a stable substructure.


Variable speed
Not all doughs can be sheeted at high speed without loss of quality. In order to optimise processing of these particularly delicate doughs, the sheeting speed of the Compas can be adjusted across a wide range.


Gentle reeling
Reels of dough make work more efficient. The dough sheet is rolled up automatically and with low tension and you can continue processing it directly. As the reeling device only runs during reeling, and not during the entire sheeting process, no flour dust is swirled up. This is an important point to improve the air in the atmosphere.


Quick and easy cleaning
The Compas features a functional design and convincing hygiene concept. Smooth surfaces made of stainless steel make cleaning the dough sheeter particularly easy. Numerous other details, such as scrapers that are easy to remove and clean, make cleaning easier.
