Taste is what is most important
The dough lives. This means that processing dough is work that demands a great deal of sensitivity. The taste and thus the success of your pastries is decisively influenced during dough processing. Gentle treatment is of the greatest importance so that the aroma substances that have formed during the bulk fermentation do not escape.


The automatic processing of dough with a high dough yield and long bulk fermentation, i.e. very soft, sticky dough, makes the highest demands on machines. With the Smartline, RONDO offers a machine for particularly gentle and tension-free dough sheet production. The gluten structure is not destroyed and the gas bubbles remain in the dough. After baking, the loaves of bread have the desired structure, either open irregular pores or fine regular pores. The pastries not only have an outstanding taste, they also stay fresh longer.


Universal use
You can use the Smartline to process not only soft and sticky doughs, but also the entire range from bread and roll doughs, sweet yeast doughs, shortcrust pastry doughs, all the way to laminated doughs such as croissant, Danish pasty and puff pastry doughs. The adjustable satellite head enables gentle rolling of soft and firm doughs.


Tension-free rolling
The unique satellite system enables gentle rolling of very soft to firm doughs. Adjusting the angle of the satellite head enables rolling over contact stretches of different lengths. There is an optimal setting for each type of dough. The angle of the satellite head is set in relation to each type of dough by means of a motor. The satellite head and lower roller are driven independently of one another, which also enables individual adaptation of the speed to the types of dough. The settings of the angle and rolling speeds are stored in the PLC control system and can be called up at any time. The Smartline thus enables optimal processing of all types of dough. The adjustable satellite unit is a RONDO patent.


Simple operation
The Smartline is operated using a modern touchscreen. The easy-to-follow symbols make operation simple. All speeds, roller gaps and other parameters can be saved, thus ensuring quality. The Siemens PLC control system has more than 100 program memory slots.

 


Simple cleaning
Smooth surfaces made of stainless steel make cleaning quick and easy. Folding doors or removable covers mean that all system sections are easily accessible for maintenance and cleaning. All cables are in fitted in a closed cable duct and connectors are protected in the housing.


Smart Feeder automatic feeding
For large quantities of unbooked dough, automatic feeding is an economical solution and represents a major reduction in the workload. The core element of automatic feeding is the Smart Feeder dough sheet pre-former. This unit gently pre-forms the dough into a thick sheet which is then processed with the Smartline.


The advantages are obvious: less waste and better pastry quality resulting from the regular dough sheet.


Universal use
Smartline is a universal dough sheet pre-former. With a usable width of 600 mm, it can be perfectly integrated into common single pastry lines.
